After 5 years exploring and creating true wild Kopi Luwak, founder Matthew Ross continues to push the boundaries of coffee production to create a delicacy coffee that is ethical, sustainable, and a true luxury.
Ross Kopi is something quite unique. It is the combination of the wild elements of nature, man’s ability to cultivate, passionate attention to detail and after all of that it comes down to pure chance. That would explain why it is the rarest coffee in the world.

A coffee, like a wine, assumes many characteristics from its environment. We look for a very specific terroir, only sourcing coffee from farms within a certain area, at the optimum altitude and with the right soil, aspect, rainfall and supporting flora that creates the exact flavour profile we are looking for.
Our cats roam free, sorting by instinct and at leisure, selecting the ripest fruit, the truffles of the crop. Enzymes produced by the Civet subtly change protein components within the coffee, alleviating its more bitter tones and leaving instead those delicate and distinctive rich, smooth, sweet notes.
We source only from small, family run farms, handed down from generation to generation with the artisan skills of the mountain farmer. We can trace every cup we make back from the moment we found it. With the increasing commodification of the modern world, we are proud to be able to value and support this cherished way of life.
